Front cameras often save a selfie mirrored, as you see yourself in a mirror, so writing on a shirt or a sign behind you reads backwards. Choose "Do not turn" and tick "Mirror left to right" to put it the way other people see it.
Phones often store the picture as the sensor saw it, with a note saying "show this turned". Some websites and older programs ignore the note. Here the picture is opened the way your phone shows it and saved with the turn made in the pixels themselves, so nothing depends on the note any more.
A quarter or half turn moves whole pixels to new places, so nothing is blurred. A JPG is saved again at high quality (95%); choose PNG for no loss at all.

No. Everything happens inside your browser, on your own device. Your files are never sent to a server, and you can confirm that in your browser's network tab. Close the tab and they're gone.
Each file can be up to 100 MB, and up to 300 MB in total. Because the work happens on your device, very large files depend on your available memory. A desktop browser handles them best.
